Mandy's Story
Life
After graduating from Briarwood, I spent 4 great years at Samford University and graduated with a bachelors degree in Nutrition/Dietetics in May 2002. A few months later, I moved to sunny Gainesville, Florida to work on my Masters degree in Nutritional Sciences at the University of Florida (Go Gators!), which I completed in December 2004. Shortly after, I moved to Orlando, Florida with my wonderful husband, Zack Layman. Zack and I met at Samford and we married in May 2003 after dating for 4 1/2 years (we were engaged 1 year of that time). It's the perfect size for the two of us and our sweet yellow lab named Janey.
I am loving my job as a clinical dietitian for Nemours Children's Clinic. Zack is enjoying working as a recruiter for TechUSA.
In my spare time, I focus on running. There are so many fun races in our area, and I enjoy every distance... 5k, half marathon, full marathon, etc. I'm also very involved in the local dietetic association. Zack and I have made a lot of friends here, so our social life is pretty busy too.
Maybe one day we'll end up back in "the true South", but for now, we are loving the warm weather down here!
