At 15 took a food preparation job at the carriage house restaurant, worked under an Italian Chef and his wife. Rudolf and Carmen. (disclaimer, please forgive my spelling) Rudolf was a driving man who taught me the basics in food prep. Had me chopping 6 bunches of parsley with a razor sharp knife yelling faster, faster until i finally got up to speed with a couple of cuts hear and there. Then he handed me another chefs knife to place in the same hand and said there now you can do it twice as fast. That was the beginning of my cooking chefs profession. I was a chef at the Keene country club, Christmas Trees Inn, Oceangate restaurant in Maine, and finally made it to the big time, so I thought, after a half dozen or so interviews they hired me to be executive chef of the Winston Salem Hilton. They had just put a few million into the place and wanted a different image. So the chef at the time was demoted under me? ah oh, his name was Oscer Macall. the day i was introduced to the kitchen staff there were 35 people lined up against the wall one of them was white, 34 were black, I am not prejudice I want you to know that from the start, some of my good friends were black while growing up. As i walked through the kitchen door I heard a voice coming from one of the staff who said "here comes the great white hope" : )... Ac...Expand for more
