Christopher's Story
If the cold, crisp air of an early fall morning in Alaska does not get your appetite churning, I know what will. Walk in the door of my bachelor pad and smell the aroma of bacon frying, maple syrup warming and Whiskey Tango Pancakes bubbling up on the skillet. This recipe makes enough to feed an army, but I promise you can freeze it for another day. It is not only yummy, with all of these ingredients it must be good for you, too.
2 c. white flour
1 c. whole wheat flour
½ c. wheat germ
½ c. cornmeal
8 T. powdered buttermilk
1 tsp. salt
3 T. ba...Expand for more
king powder
1 tsp. baking soda
1 tsp. cinnamon
¼ c. sugar
½ c. dried cranberries
½ c. slivered toasted almonds
½ c. broken toasted hazelnuts or pecans
¼ c. roasted sunflower seeds
Mix dry ingredients in a BIG bowl.
Add together
At least one grated, peeled apple
4 eggs, beaten
½ c. oil or melted butter/marg.
1 T. vanilla extract
2 T. grated lemon or peel
Several cups of milk - enough to make decent batter
Do not over mix. Combine wet and dry.
Serves 18 weenies, 12 ordinary folk and maybe 8 He-men and 3 kids.
