Boil the pasta in salted water--in fact, put the water on to boil FIRST as it takes forever to boil! And be sure not to 'watch it' :-). BIG TIP: do NOT boil it for as long as the package says, even for the good quality stu
Drain pasta; don't rinse it, as you want the sauce to stick! Just shake it a little to get excess water out of the tubes.
Put a little sauce in the bottom of the 9" x 9" pan to prevent sticking. (due to the nature of this particular pan, I also spray with nonstick spray--many pans, like smooth aluminum or porcelain, won't even need that).
Add half the macaroni, half the meatballs, and just under half the Romano cheese.
Little blurry here! but repeat the layers! Save out a handful of Romano and small ladle-ful of sauce.
Top with sauce and half the Scamorza.
I put the pan on a rimmed baking sheet--it always spills over a little bit!
Ladle the last bit of sauce on top of the Scamorza (I was a bit generous here!) which will prevent the cheese from burning before the dish is cooked--it will still (eventually!) brown. Then sprinkle the last bit of romano o
Here's the final product! Let it set a few minutes so it won't be too juicy. Serve with a simple salad and good bread for a fabulous dinner!
