48 years ago today I began the journey of sharing my life with one of the most caring, loving, unselfish, friendly, accommodating, charitable, generous, appreciative, reliable, hard-working, trustworthy, I can go on and on,
In keeping with my low acidic diet, I decided to make wraps with whole wheat tortillas, grilled wild caught shrimp, avocado and baby spinach.  The only seasoning I used was a couple of shakes of season salt on the shrimp.
Omar and Ernie are in Bullhead City working on a few things in need of repair on our 3rd floor condo.  Here's a pic of the river from the balcony.  The adjacent property had a fire awhile back as noted by the burnt shrubs.
Today would have been my lovely mother-in law's 86th birthday.  She was only 71 when she passed away.  I will always be thankful for her accepting me into her family and treating me like one of her sons from the first day s

In honor of my father Sgt. Messinger on this Veterans Day, a Purple Heart recipient who was wounded as he served our country honorably in the Philippines during WWll. RIP Dad.
Today marks 7 years that my beautiful mother passed from this earth to be with her beloved son Ricky.  This picture of her holding me was taken way back in July,1948.  We miss you ma and think of you often.

Felt like a little Italian today so I decided to make beef and spinach raviolis.  Tomato sauce is something I really shouldn't be having because of its high acidity, but you only live once.
