Thomas's Story

A WORK IN PROGRESS I am here because I have always thought, I wonder what happened to this person and that person? A question that someone has asked about me, maybe. Anyway in this day of communication and the information highway, I thought, why not? Hello. This is a short tale of the the life and times of Tommy Williams. I dropped out of McCollum High School in 1966 at 17 and joined the U.S. Coast Guard, going directly from boot camp at Alameda, Ca. to Attu Island, Ak. I finished my High School education while there and received another stripe, making me a Seaman First Class. I also received a Commandant's Award for search and rescue. I then went to the 8th Coast Guard District in New Orleans and was there on Port Security for a year. Lots of action in New Orleans and some exciting duty as well. I traded duty stations with a Seaman in Vicksburg, Ms. in 1969. I was severely injured while on duty and was retired from duty, receiving a Letter of Appreciation from the Commandant of the U.S. Coast Guard, whatever that is worth. Basically it means thanks for being here...but you can leave now. My injuries kept me down for several years but I finally recovered and went back to school...several times. I studied Business Administration, Music and at last the Culinary Arts and Hospitality. I finished my last schooling in 1999 (didn't say I was fast). I have spent almost my entire life going to school. I played music professionally for 12 years and met some great people and some famous ones as well. Jerry Lee Lewis, Stevie Ray Vaughn, James Burton ( Elvis' last guitar player), Bobbie Blue Bland, Delbert McClinton. and The Neville Bros. to name a few. I also backed up Rocking Dopsie (a well known South Louisiana Cajun Singer). I married my present Wife in 1986 and we have 3 great(nice looking too) kids. She is a retired RN. My first wife died of cancer last year but had given me one very beautiful daughter. I divorced my second wife after 4 years of marriage -- I didn't say I was good at picking wives either. But I did find the right one on the third try. I have owned 2 restaurants, have been an Executive Chef at Troy State University in Al., and also at a Private Country Club in Mo. I worked at the 5 Diamond Omni Hotel in Houston as the Evening Chef. I also worked at an upscale retirement center, The Island on Lake Travis, Tx. Early in my career I worked for some large Restaurants and Cafeterias, such as Luby's and Piccadilly and of course I still have my favorites from each of them. While in school I worked at a popular French/Belgium Restaurant in Austin, Tx. I was in charge of desserts, salads, baking ,appetizers and a few side dishes.I still enjoy Chocolate Souffles and a good Tarte Tartin (upside down apple tart),I made while working there. I also worked in catering during the off time from school. I was a participant in the Chefs for Children Program in Austin, Tx., I worked with a Chef that made pictures from Blown and Pulled Sugar, a very delicate and hot art (really). I have consulted as a culinary adviser, planning menus and recipes for private and company parties. I went to school 3 years and I worked at several other places when I could just for the experience. While in Al. I met some people and quickly became friends. They asked me to help them open a casual style family restaurant and I worked about 6 months on recipes, floor plans, decor and employee training. The Seasons Restaurant is still open today, go figure. A stroke of luck I guess. I presently send recipes and culinary tips Email to my many friends and family and it keeps me up and on top of new things happening in the food field. I also create new recipes. I think both of us were surprised and Lee requested no glass bottle drinks be served at the wedding (inside joke,sorry I threw a bottle at him years ago). Paul (I don't remember his last name) Roland & Randy Cooper (thanks Linda) Rusty Callen Whistle Martin Lloyd and Floyd Barnes Harvey Rusty with the 1955 Chevy Hildebrand Bros.and Rosie Jimmy Angleton The Bands I played in: Ralph Yount and the Upside Down Band: Ralph was a local favorite down around Campti, La. We played for a lot of standing room only crowds there because, the bar only had 3 chairs. Dean Mathis (1- 3rd of the NewBeats)played on and off with us. The Newbeats had the sevearl hits in the mid-60's: I like Bread and Butter was one of thier hits Rick Thompson and Cripple Creek Band: I was in this band 2 years and Rick was a good looking and singing nephew of Hank Thompson (Wild Side of Life, one of his many hits). We cut a popular local song in 1987 at GMR records in Gladewater, Tx. Rick went to Tn. after that song and I went back to Louisiana, he really took care of his band. Joe Shaw Band: Not a great band but we always were traveling and playing. Joe liked to work us. Played several different times with his band. Williford Brothers Band: A fun and good sounding band to play in. The 3 Brothers Garland, Bennie and Leon could sing together in 3 part harmony that was hard to beat. Garland would sing a Willie Nelson song and if you closed your eyes you could see Willie,with the right smokes! Country Squires: This Band was nothing but ear candy for me. What a musical treat to play with a bunch of old timers from the "Louisiana Hayride", a favorite venue for many great singers and bands, I mean Elvis Played there in the 1950s what more need I say? A man came up to me at a club I was playing and asked if I would like to come out and Jam with them. I took the offer and showed up at a closed music store Owned by L.D. Roberts (he played Steel Guitar in this band) I was standing outside waiting for the last few members to show up (7 in all)and a beat up, faded red Ford Truck pulled up. An old farmer got out on crutches,with a very old violin case. It made me wonder what the coming evening would bring. I went inside and they said to keep it simple, they just wanted a drummer (which I was)to keep a steady beat and do a few simple fills. I couldn't believe my ears. When the old farmer finished a fiddle lead the darn fiddle would almost smoke and L.D.Roberts was right there to burn down that red steel when the farmer gave the lead to him. All of this and 4 part harmony! At the end of the night they asked me to join the band, hell I was going to tell them I would pay to play in the band. Anyway we lasted 6 months, hard for a 7 piece band to make good money in the bars those days. Several members got tired and quit. The guitar players and myself found a singer (Rusty Walters) and played as a four piece many months. Taste of Class Jazz Band: A 5 piece band with a knocked out female singer that never met it's full potential, sometimes band members just fade away when the enthusiasm starts to die. Teddy and the Poor Boys: I played in this band when the drummer needed to take off, which was every now and then. These guys could rock! Teddy was a shoe in for Ted Nugent ,he was very good at playing Stranglehold and other old rock classics. The Canned Heat songs they covered (Let's Work Together and On the Road Again) were some of the best sounds around. Good times! The Bennie Williford Band: The Williford Brothers Band broke up and Bennie started a band with me, Rusty Walters and a lead guitar, I can only remember as Reed (sorry). It was a pretty good band, Reed could add some cool leads. Now the worse for last! Mark Dilliard Group: Such Promise, great sound and 6 months of practice and a 4 record demo tape, down the drain. Mark had a very good voice and in practice he good put it out. We booked a nice paying Gig at the Air Force N.C.O.Club Mark got stage fright so bad he couldn't sing! If the piano player or bass player didn't know a few songs it would have been a bigger disaster! We tried one more gig after that and it was over like a bad marriage. Bands of the Day: Sir Douglas Quintet Or The Pharaohs The Markays Sweet Smoke Chains Pueblio and the Valiants Sunny Ozuna and the Sunliners Or Sunglows The Trochais AKA the Ackeroyd Brothers Us Denny Ezba Shiva's Head Band The band with no Name who knew 3 Songs: Ronnie,Homer,Rudy,Roger and Tommy (Mr. tambourine) Clubs: Love Street Light Circus and the Feel Good Machine Green Gate Purple Onion Teen Town (in Highland Park) Pool Hall on North Presa (many a school day spent there) Restaurants: The Flame Griff's on Pleasanton Rd. Bud Jones Bob Jones Pan American Running Bear Captain Jim's Bill Miller's The Little Grill on Military Drive near Thom McAnn's Shoes Rexall Drug Store Corner of Military and Pleasanton Rd. I called it yellow and Tony said," That ain't yellow dummy that's Chartreuse!"). I never called it yellow again. Excuse color blind me! 1954 Cushman Eagle owned by Billy Davis and Gary Blake bought by George Daughtery Girls I dated: Doris Dale Rosie Josephine Josie Mary Brenda Patsy Marilyn Girls I would date again: not Marilyn Girls that would date me again: not Marilyn (How long is a restraining order good for?) Girls most likely to give you a STD? (Simply, Terrific, Date)? I know what you were thinking! Forget it! If I had a chance to live again anywhere? Same place, same time, same friends. Maybe a little more money would have enhanced the experience...nah being poor gave me character or made me a character or gave me characters, can't remember how that goes. Now for some "best and worst" of. Who was the worst guy to ask to sit in the car with your girlfriend (Mary) while you do some late night shopping at the closed Junkyard with the big dogs running loose? That would be me, Tommy W. Who was the worst guy to ask to keep an eye on your new girlfriend (Sharon) while you go upstate to do time at the reform school for theft from a Junkyard late at night with big dogs running loose? That would be me again, Tommy W. This brings us to the best Kissers. A double entry here. 1. Mary was a good kisser while sitting in a car late at night listening to big dogs chase her (soon to be ex) boyfriend around the Junkyard. 2. Sharon was a good kisser while sobbing and reading a letter from her new boyfriend (soon to be ex.) upstate in reform school for shopping at a Junkyard late at night with big dogs chasing him. I would like to leave a little note here and say to my late night shopping friend, this is all fiction, you know this .... right? The worst job was Cannon Polisher at Travis Park on the week-end nights I would like to say I have never been a Cannon Polisher and I have never known anyone that has done that job, Although the money sounded great, it would be hard on my manicure. Now having said all of that, I would like to mention I had a friend that was near a cannon one night and was mistaken for a cannon polisher. It turned into a nasty incident and after many years of intense therapy he can now talk about it. There are some problems that lingered: You cannot run up on him with a handful of money and a can of polish! Also you can never ask him what kind of polish he prefers! I won't tell you his name, but it sounds like Trudy without the "T". The worst guy to be drunk with and hit on his girlfriend? That would be Johnny. He had some hard darn knuckles! I told him he hit like a sissy as I spit out a tooth. The best guy to be with if three carloads of Hoods jump you throwing bottles? That would be no red lights, no speed limit Roger. He could lay down some tracks! The worst guy to stand behind and mouth off to? That would be "a back swing like a golfer", Robert. I told him he hit like a sissy as they woke me up and carried me home. The worst guy to wave the middle finger at while you are on a motor scooter and he is on a bicycle? That would be "ride like the wind, take a short cut", Roger. He beat me home and then ran over me as I got off my scooter, took weeks for the tire marks to heal on my back. I told him he ran over me like a sissy! The worst guy to go swimming with? That would be Melvin, "let me see how long I can hold Tommy underwater until he turns blue". As I was being given CPR I told him he held me down like a sissy. I later realized he had the foresight to help me train for my future in the Coast Guard during those early swimming trips. A very thoughtful and helpful guy! The best place to get a snack and a cold soda on Friday Night and listen to some cool tunes? That would be the Stinson Rec Hall. The best place to get a real butt beating on Friday Night? That would be the Stinson Rec Hall as well. The best person to have around while a huge dude is beating your butt at the Stinson Rec Hall? That would be Mrs. Martin, "I am going to call the police in 2 seconds". I told her she reminded me of my own mother, but Mom was a sissy. The best place to hear how "BAD" your car sounded would be the Flame Drive Inn, West Awning. If you could vibrate the awning loud, your car was tough! The best place to eat Tamales? That would be Ronnie's House, "My grandmother wrote the book on making Tamales". Around the Holidays the tamales were made and they were really great! What a treat! The Worst Home to light a bag of dog poop on the porch? That would be Donald's Home,"I am going turn my big, bad dog on the fools and we'll see how funny it is". Donald said he heard one of the guys yell "your dog is a sissy", as he ran off. The best place I lived before I left Texas. That would be 1139 91st. There was two girls living behind me that looked good, smelled good and always made you feel better by talking to you. Louis lived to my left and always would listen and sympathize. Then there was Julio who didn't care, didn't look good, didn't smell good, didn't talk to you, didn't sympathize or listen but, made you feel better because he always had a fifth of Osa Negra Tequila and that made him NUMERO UNO in my book! The worst place for a carload of guys in a nice 1956 Chevy to chase Gary and Tommy into? That would be Stinson Field with The Big Maze you can get lost in until you finally figure out you have been driving in circles for 10 minutes, while being pulverized with rocks, bottles and being called a carload of sissies. The best guy to go with to an Eddie's "we are gonna have a good time party"? That would be Robert,"I am loaded too, but I think I can carry you out and find our way home, if I can get off the ceiling". The worst guys to doubt? That would be Robert and Larry "Hey Tommy there is this little shack outside La Grange, you got any money"? The worst guys to sneak into a The Trail Drive In with? Johnny and Jimmy, Who would drive around half an hour while 3 guys screamed'"we can't breath in the trunk". They would say: "We couldn't scream if we weren't breathing you sissy's". The worst guy to be pulled over by the police with? That would be Virgil or you can call me BUTCH, "I have turned into an Alzheimer's Mel Tillis and it will take me 30 minutes to remember and say my name and address, while a German Shepherd snips at our legs"! The worst guy to go car shopping with? That would be "I am going to take all the car keys when the salesman ain't looking and come back for several test drives at night over the next month", Melvin.. He did, was caught, and he went upstate -- that was a very long drive. The best persons birthday party to go to? That would be Johnny, "We are going to eat so much BBQ Brisket you will moo". We did and I did, in fact I mooed and tried to give milk. The best place to eat Enchiladas? That would Roger's House , " My Mother can cook pretty good Mexican Food". She could and did many times for us. Always great and plenty of them. The worst guys to get you a beer out of the refrigerator while you are drunk? That would be Melvin and Tommy, "I bet I can drink most of this beer before I get back in the living room and give it to you and you are too drunk to know its almost empty". The best lunch time smell came from the Terrell Wells Cafeteria when they were cooking rolls. The best and cheapest lunch at Terrell Wells was a pint of chocolate milk and 3 hot tamales from the snack bar and all of this was about 10 or 15 cents.
