Troy's Story
I grauated from the cooking and hospitality institute of chicago in 2002. I got my first executive chef job 6 months later at Hollywood Casino for Fairbanks Steakhouse and also running the dining format in the living room(the high rollers lounge) on the third floor. I also previously worked at Blackbird under chef Paul Kahan in Chicago, IL, Davis street fish market in Evanston, Weber Grill in Lombard, and Aria at the Fairmont Hotel in Chicago, IL. I have certification from the American Culinary Federation with the title of Certified Chef d' Cuisine. I currently live in Westmont, and I have a beautiful daughter named Natalie.
